Infused egg rolled in rye bread & truffle crust, aged comté cream

Vol-au-vent: Spatchcock breast, truffle skin, truffle white pudding, suprême truffle emulsion, puff pastry laminated with truffle butter

Belgian dark chocolate dome, chestnut & truffle diplomate, blackcurrant parfait

Scampi aburi, scampi tartare, scampi jelly & cauliflower mousseline verrine

Rabbit à la royale: Deboned rabbit cooked in red wine & foie gras reduction, glazed & aromatised with black truffle, served with brioche feuilletée
