Vivid at The Fullerton Hotel Sydney

Launching in celebration of Vivid Sydney 2026, the Vivid theme inspired dessert – The GPO was created by The Fullerton Hotel Sydney's pastry team as a limited-edition dessert that responds to this year's festival theme, Go Beyond the Expected.

A playful reimagining of a beloved childhood classic, this dessert draws inspiration from the iridescent world of The Rainbow Fish and the grand heritage of the historic GPO building the hotel calls home.

To reflect the brilliance of Vivid Sydney's illuminated cityscape, a coconut sponge base is layered with blueberry and lemon verbena mousse, bringing floral depth and a bright berry tang. Yoghurt crèmeux adds a cool, silky contrast, while a raspberry and blueberry caramel sauce introduces a rich, jewel-toned sweetness - together evoking the shimmer and spectacle of Sydney after dark. At its centre, the dessert's form is a quiet nod to the GPO clocktower, an enduring symbol of Sydney's history and the very landmark that anchors The Fullerton Hotel Sydney.

Available exclusively from 22 May to 13 June 2026, priced at $22, across The Place, The Bar, and In-Room Dining between 11:00 am and 9:30 pm.
