• Kingfish ceviche, with persimmon, preserved lemon, and capers

• Pan-roasted john dory, with tomato suprême, and basil

• Charcoal-roasted king prawns, with harissa

Mains

• Slow-roasted dry-aged beef sirloin, with charcoal-roasted celeriac, asparagus, port and thyme jus

• Garden leaf salad, with lemon and herb dressing

• Potato gratin, with chard, and green onion
