With four innovative gelato recipes that will embody the whole truffle story and take that pungent earthy smell to a sexy place, chef Matteo Zini came up with a sweet truffle spectacle like no other.
This gelato experience is an affordable way to sample such a decadent flavour, and it’s so rich that every scoop is plenty.
Truffles are not a regular item on our daily plate; these beauties have a price tag to match their scarcity! So, chef Matteo Zini thought: "how can we give people a taste of these truffles without forcing them to remortgage a property?".

This recipe was inspired by how people eat truffles in Piedmont, the Italian land of truffles: simply shaving fresh truffles on top of egg yolk. So, this is an egg yolk-based gelato with an abundant amount of fresh truffles, salt and pepper.
One of the most incredible pairings with truffles is mushrooms. This gelato is made using Portobello mushroom paste, truffle and a hint of salt to add savoury depth. The taste is curious – a mix of sweet and savoury that seems to play tricks on your brain.
Piggy-backing from the same techniques used by chef Matteo Zini for his famous Parmigiano Reggiano Gelato, this recipe swaps Parmigiano with Pecorino cheese and just the perfect dose of fresh truffles to create an explosion of surprising flavours you'll never forget!
This recipe balances the sweet taste of white chocolate gelato, the musky and intense aromas of fresh truffles and the crunchiness of roasted Iranian pistachios.
