Spanish wine class and tasting

Instituto Cervantes Sydney organises a Spanish wine class to offer a unique opportunity to learn about Spanish wines and to taste 4 specific varieties of wine.

This unique wine experience is available only one day and seats are limited to 10 participants only so be quick when you book. Total Class and tasting duration will be one hour.

Instituto Cervantes Sydney is a registered COVID Safe business in NSW. Event in English.

About the teacher:

Javier Polo, born in Madrid within a family involved in the art of making wine, began to work in Carlos Oyarbide's restaurant and to enjoy the cava of some restaurants such as Siglo XXI, Fortuny, Zalacain where he worked during the period he was attending university, learning from the best sommeliers.

After graduating and doing a master's degree in Marketing, he dedicated himself to other businesses and companies, leaving wines as a residual activity but always maintaining a strong passion and close contact with the family winery. On the top of having attended Fairs from the sector he has been creating a strong network of contacts and friends within the industry.

It is on 2009 when he reinvents his professional career and since then dedicates himself full time to training and working with different wineries helping them to export to different countries. He moved to Australia in 2015 for a personal project that has led him to work with Thistle Hill in Mudgee, Australia's oldest organic vineyard.
