Sydney is back in love with seafood. But not just any old fruits de mer, we’re talking uber-luxe, coastal treasures plucked straight from the sea. Think Appellation oysters that taste of the ocean, silky caviar that pops with buttery goodness, sweet creamy umami-packed sea urchin, wild fish sustainably sourced just clicks from the harbour.

For an evening as exquisite as this, we rounded up three of the most influential people in the business; Michelin-trained, two hat chef Alessandro Pavoni, industry powerhouse John Susman, and former head chef of Sydney’s iconic North Bondi Fish, Jesse McTavish. Join Alessandro, John and Jesse for an unforgettable multi-course evening including wine and beer at Good Food Month’s From Sea to Shore: A Celebration of Seafood presented by Citi.

From Northern Italy to Sydney’s lower North Shore, chef Pavoni is a man obsessed with water. His iconic seafood-only restaurant, Mosman’s Ormeggio at the Spit (which was awarded one chef-hat in its opening year, and has achieved two hats ever since) sits gently on the water and boasts magnificent views of Middle Harbour. His latest venture, a’Mare, means ‘by the sea’ in Italian and is perched at Barangaroo with bay views that stretch across to Balmain. The Lombardian-born Alessandro has authored a cookbook on the recipes and regional fare of the lakes of Northern Italy. It’s the life aquatic for Pavoni; he’s a man dedicated to bringing the very best in ethical pescatarian dining. 

He’ll be joined by friend and seafood industry legend, John Susman; a man whose 30-year professional commitment to seafood and seafood sustainability has made him Australia’s foremost expert. Susman is not only an advocate for sustainable fishing and traceability, but has been catching, cooking, selling, marketing and critiquing seafood in Sydney for most of his life. Put simply, he’s the man that gets the best products into the best restaurants. Joining Pavoni and Susman is Jesse McTavish: the renaissance man of seafood. He’s a chef, fisherman, forager and regular masterclass presenter at Sydney Fish Markets. He was born in Byron, and is now the proud owner of Avalon’s latest coastal addition, the fish-focused Bar Elvina. It’s safe to say McTavish lives and breathes seafood.
